First, the peels should be left on for a greater crunch, which is why people preparing the potatoes should clean them very well in advance. Once the potatoes are ready, they should be boiled in salty water to absorb some of the salt and enhance the flavor. After boiling, the potatoes should be roughed up to increase the surface area and give them space to get more crispy.
