5-Minute Grits With Shrimp Recipe

Raw grits

For the Grits

  • 4 cups water or chicken stock
  • 1 cup quick-cooking 5-minute grits
  • ½ cup shredded cheddar cheese
  • 1 tablespoon hot sauce
  • 2 tablespoons butter
  • 2 scallions, thinly sliced
  • Salt and pepper, to taste

For the Shrimp

  • 1½ pounds large shrimp, peeled and deveined
  • 1 bottle (8 ounces) clam juice
  • 2 tablespoons flour
  • 2tablespoons butter
  • 1 small onion, finely chopped
  • 1 red bell pepper, finely chopped
  • 4 scallions, thinly sliced
  • 3 cloves garlic, finely chopped
  • 1 teaspoon hot sauce (or more to taste)
  • Grated rind and juice of 1 lemon
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper, to taste

How to Prepare This 5-Min Grits & Shrimp Recipe

Preparing grits

Step 1

Start by combining the water (or stock) with the hot sauce in a heavy-based flameproof casserole. Bring to a boil over high heat, then add the salt, pepper, and grits. Let it simmer on low heat for about 5 to 7 minutes (until it thickens), stirring occasionally.

Step 2

Once the grits mixture is nice and thick, add in the scallions, cheddar, and butter. Add more salt and pepper to taste. Cover with a lid and keep in a warm place.

Step 3

It’s time to prepare the shrimp. Grab a large skillet and melt the butter over medium heat. Add the red pepper and stir for about 3 minutes. Add the garlic and onion, and stir for another 3 minutes.

Step 4

Add the pepper, salt, and shrimp in the skillet and stir occasionally for 3 to 5 minutes until the shrimp are cooked through. Add almost all scallions (reserve 1 tablespoon for later).
